Mashed Broccoli And Leeks With Cheese

- 1 1/2 pound broccoli, cut into 1-inch chunks, including stems shopping list
- 1 large leek, roughly chopped shopping list
- 2 cloves garlic, smashed shopping list
- 1 1/2 cups vegetable or chicken broth shopping list
- 1/4 cup plain yogurt or light sour cream shopping list
- salt and pepper, to taste shopping list
- 1/2 cup grated cheddar cheese shopping list
How to make it
- In a large pot, combine broccoli, leek, garlic and broth. Bring to a boil and simmer, covered, over low heat until broccoli is tender, about 15 or 20 minutes.
- Remove from heat and puree in the pot with an immersion blender (be careful not to spatter!), or transfer to a food processor or blender and puree. (i like to leave a few chunks though, for texture)
- Stir in yogurt or sour cream and season to taste with salt and pepper. Sprinkle each serving w/ a bit of grated cheese.
