How to make it

  • In a large pot, combine broccoli, leek, garlic and broth. Bring to a boil and simmer, covered, over low heat until broccoli is tender, about 15 or 20 minutes.
  • Remove from heat and puree in the pot with an immersion blender (be careful not to spatter!), or transfer to a food processor or blender and puree. (i like to leave a few chunks though, for texture)
  • Stir in yogurt or sour cream and season to taste with salt and pepper. Sprinkle each serving w/ a bit of grated cheese.

    CAN YOU FREEZE LEEKS IF GROWN FRESH IN A GARDEN OR BOUGHT FROM A STORE? DON'T KNOW MUCK ABOUT LEEKS AND HOW TO COOK IT.
