How to make it

  • Bake the potatoes as usual (I normally microwave them on full, hence the 15 minutes).
  • In the meantime, sprinkle the sliced apple with lemon juice to prevent discoloration.
  • Put the celery, apple and walnuts in a bowl and add the yogurt.
  • Crumble the blue cheese into the bowl, then toss all the ingredients together until well combined.
  • When the potatoes are ready, cut a cross in the top of each one.
  • Gently squeeze each potato to open out the cross slightly.
  • Season the potatoes with salt and pepper.
  • Spoon the blue cheese mixture on top.
  • Enjoy!
