Crunchy Blue Cheese And Walnut Filled Baked Potatoes Recipe
Baked potatoes are delicious, even just with a knob of butter, but for a special treat, this filling is brilliant (at least for me!)

Ingredients
  • 4 large baking potatoes
  • 1 apple, sliced
  • lemon juice
  • 2 stalks celery, sliced
  • 1/4 cup walnuts, chopped
  • 150 grs greek yogurt
  • 50 grs blue cheese
  • salt and pepper

Directions
  1. Bake the potatoes as usual (I normally microwave them on full, hence the 15 minutes).
  2. In the meantime, sprinkle the sliced apple with lemon juice to prevent discoloration.
  3. Put the celery, apple and walnuts in a bowl and add the yogurt.
  4. Crumble the blue cheese into the bowl, then toss all the ingredients together until well combined.
  5. When the potatoes are ready, cut a cross in the top of each one.
  6. Gently squeeze each potato to open out the cross slightly.
  7. Season the potatoes with salt and pepper.
  8. Spoon the blue cheese mixture on top.
  9. Enjoy!
