Crunchy Blue Cheese and Walnut filled Baked Potatoes

- 4 large baking potatoes shopping list
- 1 apple, sliced shopping list
- lemon juice shopping list
- 2 stalks celery, sliced shopping list
- 1/4 cup walnuts, chopped shopping list
- 150 grs Greek yogurt shopping list
- 50 grs blue cheese shopping list
- salt and pepper shopping list
How to make it
- Bake the potatoes as usual (I normally microwave them on full, hence the 15 minutes).
- In the meantime, sprinkle the sliced apple with lemon juice to prevent discoloration.
- Put the celery, apple and walnuts in a bowl and add the yogurt.
- Crumble the blue cheese into the bowl, then toss all the ingredients together until well combined.
- When the potatoes are ready, cut a cross in the top of each one.
- Gently squeeze each potato to open out the cross slightly.
- Season the potatoes with salt and pepper.
- Spoon the blue cheese mixture on top.
- Enjoy!
