  • BBQ Chicken with Bucati Pilaf Grilled Tomatoes and Peppers
  • GRILLE VEGETABLES:
  • 2 Organic Anaheim Peppers sliced in half seeds removed.
  • 1 Organic green pepper sliced in half and seeded.
  • 1 Organic red tomato cut in half.
  • 1 organic green tomato cut in half.
  • 1 tablespoon of olive oil
  • Nastursums for garnish
  • PILAF:
  • 1 cup of mixed rice blend.
  • ½ cup of Bucati pasta broken up into 1-inch pieces.
  • 3 cups of mushroom stock
  • 2 tablespoons soy sauce.
  • 1-tablespoon butter
  • 1-tablespoon olive oil
  • 4 tablespoons fresh chives.
  • 1 garlic clove minced
  • GRILLED CHICKEN RUB
  • 2 Organic chicken legs washed and pat dry.
  • 1 teaspoon of chili powder
  • 1 teaspoon of sea salt
  • ½ teaspoon of turmeric
  • Fresh rosemary leaves.
  • BBQ Sauce

Directions
  1. Preheat oven to 350F.
  2. Lift off the skin and place several rosemary leaves under the skin place skin back over leaves.
  3. Rub tall surfaces of the legs with spice rub.
  4. Bake in an ovenproof baking dish foe 30 minutes.
  5. Baste both sides of chicken legs with BBQ sauce” see my recipe hint hint” turn over and bake for another 15minutes.
  6. Remove chicken to heated grill.
  7. Grill on both sides for about 5 minutes on each side.
  8. VEGETABLES:
  9. Oil all the vegetables and grill until tender about ten minutes on each side.
  10. PILAF
  11. In a small fry pad ad the Bucati and fry on high stirring constantly until brown. Set aside.
  12. In a small pot, add the butter, olive oil and rice.
  13. Add the mushroom stock, soy sauce and Bucati and bring to a boil.
  14. Cover and lower heat simmer for 30minutes, remove lid, stir with a fork, and let rest.
  15. Add a piece of chicken and one of each of the grilled vegetables and garnish with
