Good Old Chicken With Rice Soup Recipe

Ingredients

8 cups chicken broth

1 onion, chopped

2 stalks celery, diced

2 carrots, diced

2-3 garlic cloves, minced

1 cup uncooked rice

1 1/2 teaspoons dried thyme

2 cups cooked chicken, diced

salt and pepper (to taste)

Directions

Combine broth, onion, celery, carrots and garlic in a large soup pot.

Bring to a boil.

Add rice and thyme.

Reduce heat to low and simmer, uncovered, 30 minutes, stirring occasionally.

Add chicken and heat through.

Thin with more broth if necessary.

Add salt and pepper to taste.

I make this with the thyme...It is wonderful.. A few years back we took grandkids tubing on the Frio River, we had rented a cabin.. This is what they wanted at night after we all got settled in, after all day in the heat and the cold water... this was like gormet food.
Thyme has always been my SECRET ingredent... now you busted me! Good recipe...

I made this recipe and it smelled SOOO GOOD! It tasted REALLY bland though so I added some salt and that didn't chance it very much so I added some garlic salt to the next batch and that still didn't do very much so finally, I added some season salt and it was TOTALLY better.
