Peach Chutney Recipe
Found this recipe in Cooking Light magazine. Served it with grilled pork loin and it was fantastic! 57 calories per 1/4 cup.

Ingredients
  • 5 cups peeled, chopped peaches (about 1 3/4 lbs)
  • 1 1/2 cups red onion, finely chopped
  • 1/2 cup light brown sugar, packed
  • 1/2 cup white wine vinegar
  • 3 Tbsp peeled, minced fresh ginger
  • 1/2 tsp salt
  • 1 jalapeno pepper seeded & minced
  • 1/2 cup fresh cilantro, chopped
  • 2 Tbsp fresh lime juice

Directions
  1. Combine first six ingredients in a saucepan and bring to a boil.
  2. Cover, reduce heat and simmer 45 minutes.
  3. Stir in jalapeno.
  4. Simmer, uncovered, five minutes.
  5. Remove from heat.
  6. Stir in cilantro and lime juice.
  7. Cool to room temperature.
