A delicate whole wheat pasta dough that does not fall apart or stick together unduly.

Ingredients
  • 1 1/2 C semolina flour
  • 1 1/2 c freshly ground whole wheat flour
  • 1/2 tsp salt
  • 4 eggs
  • 1/4 c water
  • 1/4 c olive oil

Directions
  1. Combine semolina and flour and salt.
  2. Beat eggs lightly
  3. Mix eggs, water and oil
  4. Stir in to four mixture until a stiff dough forms,. You may need to add a little more flour
  5. knead 10 minutes or until elastic
  6. let rest, covered for 20 minutes
  7. roll out thinly
  8. cut into desired shape or shape with machine
  9. Cook in boiling, salted water for 2-5 minutes.

I tried this recipe & it's great! I made it in my food processor & it couldn't have been any easier. I had tried a different whole wheat pasta & it was tough but when I tried yours it was just wonderful..very tender pasta. Thanks so much for posting it.
