Ingredients

How to make it

  • Cook suga, corn syrup, vinegar together in a heavy candy pan covered until it comes to a boil
  • Remove cover and cook to 290 degrees on a candy thermometer, then add vanilla, and cook to 300 degrees. DO not stir while boiling.
  • Gradually reduce heat to as mixture thickens to prevent scorching.
  • Remove from heat and Quickly stir in sifted soda. Pour into buttered large cookie sheet as it foms. Do not spread, it will spread itself.
  • When cool break into small pieces. Dip into melted chocolate.
  • Melt Chocolate (milk or semisweet) in double boiler with 1/2 cake of parafin wax.

    Are you supposed to STIR in the vanilla? "ADD" is not a very descriptive action verb and since it says not to STIR it while boiling...well, it is confusing. I didn't stir (I was afraid to) so it scorched. It was still yummy and fun, but not at all like the picture!!!!

    I've just added a picture of what sponge candy looks like. It is divine! It's so light inside, it's no wonder some people call it fairy candy. It is not cotton candy. That's spun sugar. Entirely different premise.

    In America, we call it cotton candy, and in England it’s called candy floss or fairy floss. Whatever name you call it, it’s good! You got my HIGH 5 for it! :)
