Kolaches are a Polish and Eastern European filled pastry that originated to use leftover bread dough. They have evolved into a wonderful easy-to-make pastry that can be flled with just about anything. See Note and enjoy

Ingredients
  • 2 packs dry yeast or 5 tsp
  • 1/4 cup each, butter and shortening
  • 1 tsp salt
  • 1/2 cup warm (110 degrees) water
  • 1 cup milk
  • 3/4 cups sugar, divided
  • 3 eggs, beaten
  • 4 - 5 cups all-purpose flour

Directions
  1. Dissolve yeast in water with a couple of tablespooons of sugar. Let proof until bubbly.
  2. While yeast is proofing, move to next step.
  3. Heat milk with sugar until dissolved
  4. Add butter, shortening,sugar, salt, eggs,
  5. Add mixture to yeast, but make sure temperature is less than 110.
  6. Gradually add flour, working dough gently until it doesn't stick to your hands when touched. The dough will be very soft and elastic. .
  7. Place in greased bowl and cover.
  8. Let rise until doubled.
  9. Punch down and divide into four equal pieces, then divide each piece into 12 portions.
  10. Form each portion into ball and place on greased baking sheet about 3 inches apart
  11. Let rise until doubled
  12. Using thumb or finger, press center and form a deep indention, forming a small rim.
  13. Fill with filling (see note)
  14. Bake at 350 until lightly browned.
  15. Brush with melted butter
  16. Remove to wire rack to cool. Be careful jelly will burn you if it dribbles.
  17. Note: You can fill with Jam, Marmalade, Cooked sausage makes a breakfast treat. Or, make a fruit filling or use a canned pie filling. Hot pepper jelly is interesting. There are no rules. Let your imagination run wild.

This is indeed a taste treat. My mother used to make these. My favorite is apricot filling and my parents was prune. They knew better than to touch one of my apricot filled ones. Those I would fight over LOL Thanks for the trip down memory lane and reminding me to make some for my own family

A friend brought me these from Texas and they were filled with breakfast goodies. I cant wait to try them.
