Red Beans And Boozing Chicken

- 1 lb red beans shopping list
- 10 cloves garlic minced + 1 clove garlic minced shopping list
- 2 tsp olive oil shopping list
- 1 cut up chicken (skinned and bone in) or 4 bone in chicken breast halves shopping list
- 2 TBS brandy + 1TBS brandy shopping list
- 4 Cups chicken stock shopping list
- 2 tsp salt shopping list
- 2 tsp bouquet garni (2 bay leaves, 2 tsp thyme, 1TBS parsley) shopping list
- 2 Cups red wine shopping list
How to make it
- Soak beans of at least 8 hours and set aside
- In a Dutch oven, sauté 10 cloves garlic in 1 tsp oil for 1 minute
- add remaining oil and brown chicken for 3 minutes on a side
- Add 2 TBS brandy and toss chicken around, and remove chicken from pot.
- Add chicken stock and bring to a boil
- Add beans, salt, and banquet garni, 1 clove minced garlic, and 1TBS Brandy and bring to a second boil
- Reduce heat, cover and simmer for 2 hours, stirring occasionally
- Add chicken, browned garlic, and red wine, and cook of 1 hour more.
