Ingredients
  • 1 lb red beans
  • 10 cloves garlic minced + 1 clove garlic minced
  • 2 tsp olive oil
  • 1 cut up chicken (skinned and bone in) or 4 bone in chicken breast halves
  • 2 TBS brandy + 1TBS brandy
  • 4 Cups chicken stock
  • 2 tsp salt
  • 2 tsp bouquet Garni (2 Bay leaves, 2 tsp thyme, 1TBS parsley)
  • 2 Cups red wine

Directions
  1. Soak beans of at least 8 hours and set aside
  2. In a Dutch oven, sauté 10 cloves garlic in 1 tsp oil for 1 minute
  3. add remaining oil and brown chicken for 3 minutes on a side
  4. Add 2 TBS brandy and toss chicken around, and remove chicken from pot.
  5. Add chicken stock and bring to a boil
  6. Add beans, salt, and banquet garni, 1 clove minced garlic, and 1TBS Brandy and bring to a second boil
  7. Reduce heat, cover and simmer for 2 hours, stirring occasionally
  8. Add chicken, browned garlic, and red wine, and cook of 1 hour more.
