Ingredients

1/3 cup frozen mixed pepper onion stir fry

Scant

4 cup mild or medium salsa

1/4 cup Shredded reduced fat cheddar chees{your choice}

1 whole wheat English muffin

Directions

In a medium nonstick skillet coated with cooking spray cook onion and pepper mixture over medium heat stir often untill onion is tend.er -4-6-minutes

Meanwhile divide Salsa evenly between muffin halfs spread even Sprinkle with cheese on both halfs toat in a toaster oven untill cheese melts.

When pepper and onion is done top muffin with mixture{divide evenly. {Of cours I will add Pepper jack cheese yum}

I'm going to try this one for sure! I use whole wheat pita bread to make mine. I've never used salsa, just plain tomato sauce. This sounds great!
