Here's a comforting seafood casserole from an old Vidalia onion promotional pamphlet I got at the grocery store when Vidalias were first widely promoted in my area, I don't remember how many years ago.

Ingredients
  • 6 1/2 ounce can crab meat, rinse and drain
  • 1/2 pound cooked shrimp (thaw if using frozen)
  • 1 can cream of celery soup
  • 8 ounce bar of cream cheese
  • 2 ounce jar pimientos, chopped
  • 1/2 cup milk
  • 1 cup cooked rice
  • 2 Tbsp butter
  • 2 cups chopped Vidalia onions
  • 1 cup chopped green peppers
  • crushed butter flavor crackers for topping

Directions
  1. Saute the onion and green pepper in a large skillet,.
  2. Add pimientos, soup and cream cheese.
  3. Heat slowly until blended.
  4. Add the rice, shrimp and crab meat and mix well.
  5. Turn into a large casserole or baking dish, or just use an ovenproof skillet.
  6. Bake for 30 minutes (total) at 350 degrees.
  7. After 20 minutes, top with crushed cracker crumbs and return to oven for additional 10 minutes.

Wow. Yumm, yumm, yumm!


Okay, so I made this afternoon and thought I would update. Anyway, it turned out SO well! It was very tasty and easy to make. I added in a couple splashes of hot sauce because I love hot sauce in casseroles. (well, in everything really... LOL) It was great! I also added in a bit of chopped celery for extra crunch. Other than that though, I pretty much stuck to the recipe as I knew it would be good as it! (and it was... yum yum!)

I submitted a couple photos of how things turned out.. Hope that is okay. :)
