Moist And Crispy Chicken Recipe
Here's a recipe for crispy yet moist chicken. It came from a Hellman's mayonnaise ad years ago. You may use cut-up chicken parts of your choosing or boneless breast meat if you wish. You may need to adjust cooking time.

Ingredients
  • 3 cups crispy rice cereal
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 broiler-fryer chicken, cut in parts (or your preference, see above)
  • 1/2 cup mayonnaise (the real thing not salad dressing)

Directions
  1. Crush the cereal and place in a large plastic food bag, along with paprika, salt and pepper.
  2. Shake crumb mixture to blend seasonings in well,.
  3. Brush the chicken pieces on all sides with mayonnaise.
  4. Place one piece of chicken in bag of crumbs and shake to coat well,.
  5. Place chicken piece on the rack of a broiler pan.
  6. Repeat steps 3 through 5 for each piece of chicken. Do not put more than one piece in the bag at a time.
  7. Bake at 425 for 40 to 45 minutes or until golden brown and tender.
