How to make it

  • Sift the icing sugar in a bowl with the ground almonds. Add the remaining ingredients and mix to make a stiff paste. Knead until smooth. (As a substitute to raw eggs it is possible to use a little water mixed with brandy to bind the paste).
  • note::: the finer you can get the almonds the nicer you marzipan will be

    I'm going to have to try this! I have never made marzipan before. I've always cheated and just bought the cheapie almond paste for my desserts. Homemade is always better though! Recipe # 2 looks like the one I will try -- i like the addition of vanilla extract.

    Do the egg whites need to be beaten or frothed at all before mixing into the ingredients or do I just dump them in as is?
