Lemon Snowdrops

A tender sweet cookie with a tart lemon filling. Delightful to look at & even better to taste
Ingredients
- COOKIES:- shopping list
- 1 cup butter - softened shopping list
- 1/2 cup icing sugar shopping list
- 1 tsp lemon extract shopping list
- 2 cups all-purpose flour shopping list
- 1/4 tsp salt shopping list
- . shopping list
- lemon FILLING:- shopping list
- 1/4 cup sugar shopping list
- 2 1/4 tsp cornstarch shopping list
- 1/4 cup water shopping list
- 1 Tblspn butter shopping list
- 1 tsp grated lemon peel shopping list
- 4 1/2 tsp lemon juice shopping list
- yellow food coloring - if desired shopping list

- icing sugar for garnish shopping list
How to make it
- Pre-heat oven to 400 degrees
- COOKIES:-
- With a wooden spoon, beat butter, icing sugar & lemon extract in a medium bowl.
- Stir in flour & salt
- If at this point the dough is too soft to shape, place in the fridge 1 - 2 hrs until it is firm enough
- Shape dough into 1 inch balls
- Place about 1 inch apart on an un-greased cookie sheet
- Flatten slightly with the flat bottom of a glass dipped in granulated sugar
- Bake 8 - 10 mins until the edges are barely light brown
- Immediately move to wire racks to cool
- Put cookies together in pairs with Lemon filling
- Sift with icing sugar
