How to make it

  • Wash the avocados in cold water.
  • Cut the avocados in half lengthwise. Remove the seed and leave the skin on.
  • Place the avocado on a bed of Romaine leaves with a wedge of lemon and sliced tomatoes.
  • Mix the crab meat, celery, green pepper, onion juice Mascarpone cheese and mayonnaise together; add nutmeg, salt and paprika.
  • Heap this on the avocado half and decorate with the capers.

    My mother used to make something like this and she would place half a hard boiled egg in the hollow left by the pit in the avocado. This sounds very very scrumptious.

    Good Heavens, this is awesome and I can't wait to try. Since Dungeness is out of my league, I'll have to sub a coldpack of blue crab. But I can imagine Dungeness is out of this world. Great post.
