Awesome Chicken and Sausage Quesedillas

- 2T margarine or butter shopping list
- 2T EVOO shopping list
- 6 skinless boenless chicken thighs, cut into small pieces shopping list
- 8 oz andouille, keilbasa, or other smoky sausage, cut into small chunks shopping list
- 1 red pepper, cored, seeded, and shopped small shopping list
- 1 onion, chopped small shopping list
- 4 cloves garlic, finely chopped shopping list
- 1 can (4 oz) mild green chiles (drained and chopped) shopping list
- 1 jalepeno (optional - seeded and chopped fine) shopping list
- 1 T chili powder shopping list
- 1 t cumin shopping list
- seasoned salt shopping list
- garlic pepper shopping list
- dried cilantro shopping list
- 8 10" flour tortillas shopping list
- 2 c shredded cheddar jack cheese (or your fave) shopping list
- Foreman Grill (or cast iron skillet) shopping list
How to make it
- In nonstick or cast iron skillet, melt together margarine and EVOO (i know - but too lazy to type it all out! LOL)
- Add to skillet chicken, sausage, peppers, onion, chiles and seasoning
- Cook together about 10 minutes, until chicken is done and veggies are soft
- Remove from heat
- Lay tortilla on foreman grill, spread with 1/4 of the cheese, top with 1/4 the filling, and another tortilla
- Grill about 2 minutes with lid closed (until crsip and cheese is melted)
- Repeat with remaining ingredients
- (If your foreman grill is small, layer the engredients on half the tortilla and fold remaining half over top)
