My mom invented these, and I've loved them since i was little. When i give people the recipe, they usually wrinkle their nose at me and say "ketchup?!?", but once they try it, they are hooked!

Ingredients
  • 1 package button mushrooms (20 or so, on average)
  • ½ package of sliced pepperoni, chopped (about 40 of the thin slices, or if you prefer, 1/2 stick of pepperoni, chopped small)
  • ½ cup cheddar cheese
  • 2-3 Tbls ketchup
  • 1 small onion, chopped fine
  • 1-2 Tbls butter

Directions
  1. Clean the mushrooms and remove the stems. Set mushroom caps aside for later. Chop mushroom stems in to small pieces, set aside.
  2. In a pan, melt butter and add onions. Cook the onions until they are soft and translucent.
  3. Once the onions are translucent, add the mushroom stem pieces and cook until they are soft.
  4. Add the pepperoni to the mixture and cook until warm.
  5. Over low heat, add the ketchup and stir until it all combined.
  6. Remove from heat and add cheddar cheese to mixture, and stir until melted.
  7. Fill the mushroom caps, and place in the oven at 350 degrees for 10-15 minutes until cooked through and mushroom caps have softened.
  8. *You will probably have leftover filling, save it. It’s yummy!

Ok, I gotta try this. I love stuffed mushrooms. I have a recipe on here for Mushroom Stuffed Mushrooms, that's how much I like them. I'll be back to comment.


We made these for a birthday party this last weekend. They were gone in a flash... GREAT.

This does sound good...now I'm a "ketchup nose wrinkler" too...but I can see Heinz 57 or pizza sauce or something. Will try with the ketchup, though.


Ketchup, Catsup, Smatchup. It's tomato sauce with spices added. If you made it yourself it would be a great recipe. Acutally the King of Sauces, Henry Bain Sauce, contains whatever that word is that we won't mention. LOL.
