Toasting the almonds sounds like a great idea as is the idea of letting the dressing marinate in the refrigerator over night.
We have found that keeping the noodles separate frokm the other ingredients for as long as possible will assure better crispness, especially if you expect to have leftovers. If mixed, the slaw will wilt and the noodles will become soggy.

They do sort of "cook" in the dressing, but it is best when the noodles are not soggy. I like to leave the noodles in slightly larger chunks, which helps keep them from getting overly "cooked" in the vinegar. We add pine nuts sometimes too!
