Pepper Crusted Stuffed Flank Steak Recipe
Another tried and true estate sale purchased recipe. I have made this at least a dozen times over the year and it is one my husband begs for often. Enjoy

Ingredients
  • 4 pound flank steak butterflied
  • 1 cup fresh spinach chopped
  • 1 cup crisp bacon
  • 1/2 cup parmesan cheese
  • 1 cup red and yellow bell peppers diced
  • 6 cloves roasted garlic crushed

Directions
  1. In large skillet cook bacon until just done but not crisp then drain on paper towels.
  2. Score steak by making shallow cuts at 1” intervals diagonally across steak in a diamond pattern.
  3. Repeat on second side then pound steak into a rectangle working from center to edge.
  4. Sprinkle with salt and pepper then arrange bacon lengthwise on steak.
  5. Spread spinach, pepper and garlic over bacon then sprinkle with parmesan cheese.
  6. Roll up from short side then secure with wooden picks at 1” intervals starting 1/2" from end.
  7. Grill or broil to desired doneness then cut between picks into 8 slices.
