TENDER Eye Of Round Roast Beef Recipe
This recipe takes a cheaper eye of round beef cut that is traditionally tough and chewy and turns it into tender bliss.

Ingredients
  • eye of round beef roast (3 lbs)
  • salt
  • pepper
  • garlic
  • additional seasonings

Directions
  1. Slice a few cloves of garlic into pieces. Make slits all around the meat and insert the garlic pieces into the slices on the beef.
  2. Season roast with salt, pepper, and whatever other seasonings you desire.
  3. Place roast in roasting pan or baking dish. Do not cover or add liquid. Place in 500 degree oven and then immediately turn the heat down to 475 degrees.
  4. Roast at 475 for 7 mins per pound. So with a 3lb roast: 21 minutes.
  5. After that, turn oven off and let roast sit in oven for 2.5 hours. Do NOT open the door during this time.
  6. Remove roast, rest, carve, devour.

Interesting method. I'll have to give it a try. Does the roast come out rare, med-rare or well done? Thanks for some "food for thought"!


Medium rare. I'd say take a min per/lb cooking time off for rare and add a min for more well done.


My friend who worked at a steakhouse for many years suggested that I inject bacon fat into the slits and rub the whole thing down with olive oil. I'm betting it will be good..

What if you have veggies dont they need water??


I would opt to do the vegetables separately because I feel that they wouldn't need to spend as much time in the oven. I guess it depends on what they are?

WOW! I was a bit nervous trying this since it just sits in the oven for 2 & half hours. Was VERY VERY TASTY!!!! Hubby even went for 2nd's! lol Will definately do cheap meat like this from now on :) THANKS FOR SHARING THIS YUMMY RECIPE!


It is in the oven cooking now! I had 5 lbs cut in three seperate hunks, I cooked for 35 min at 475 and oven is off now. Will be ready at 4:30...smells wonderful!
