- 1 lb fresh carrots, scubbed well shopping list
- 2 tbsp skim milk shopping list
- 1/2 cup plain, non-fat yogurt shopping list
- 1/2 tbsp lemon juice shopping list
- 6 tbsp grated horseradish shopping list
- 1/4 tsp salt shopping list
How to make it
- With a vegetable peeler, cut carrots into long, thin ribbons. Place in a bowl of ice water mixed with 2 tbsp lemon juice for 1 hour.
- Drain and pat the carrots dry.
- Divide carrots between chilled serving bowls.
- Combine the milk, yogurt, lemon juice, horseradish and salt in a small bowl.
- Pour dressing over each bowl of salad, and serve immediately.
