How to make it

  • With a vegetable peeler, cut carrots into long, thin ribbons. Place in a bowl of ice water mixed with 2 tbsp lemon juice for 1 hour.
  • Drain and pat the carrots dry.
  • Divide carrots between chilled serving bowls.
  • Combine the milk, yogurt, lemon juice, horseradish and salt in a small bowl.
  • Pour dressing over each bowl of salad, and serve immediately.
