How to make it

  • In large pot, add flour and water, and cook until medium brown-stirring frequently. This is called Roux (Roo). Roux is the base to a lot of cajun recipes.
  • Add onion, bell pepper, celery and garlic.
  • Cook until veggies are soft.
  • Add chicken stock
  • Bring to boil, stirring until roux is disolved.
  • Add chicken and sausage (sausage should be sliced into small pieces and cooked to remove some of the fat)
  • Add parsley and green onions.
  • Simmer over low to med heat for 1-2 hours
  • Serve over rice.
  • Add Tabasco to your liking.
  • Great with potato salad and fresh garlic bread!
  • YUMMY!

    The oil to flour ratio is a bit unbalanced in my opinion, still the hands of a good gumbo lay in the spoon of the chef.

    There is a mistake and I don't know how to edit. In the "How to make it" It should say:

    Love gumbo and make one just about like this one but I do not put garlic in it. Can't cook without my Tony's.
