Chicken, mildly spiced with Chile, and stir-fried, served on a bed of rice noodles make this dish a winner for your family!

Ingredients
  • 3 lb Chicken breast, skinless and boneless
  • 6 oz Nuoc nam (Vietnamese fish sauce) or nam pla (Thai fish sauce)
  • 3 Garlic cloves chopped fine
  • 1/2 tsp Black pepper
  • 1 lb Rice sticks
  • 1 1/4 pt Nuoc cham (A Vietnamese CONDIMENT that's based on NUOC NAM (fish sauce) combined with various seasonings that can include red chiles, garlic, lime juice, ginger, scallions and sugar. )
  • 3 oz Vegetable oil
  • 6 Thai green chiles or serrano chiles, seeded and sliced thin
  • 12 Scallions, sliced
  • 8 oz Snow peas, trimmed and blanched
  • 6 oz Tomato concassé (A mixture that is coarsely chopped or ground)
  • 2 tbsp Sesame seeds, toasted

Directions
  1. Cut the chicken breasts into 1-in pieces.
  2. 2. In a bowl, toss the chicken with 6 oz fish sauce, garlic, and pepper.
  3. Marinate 15-20 minutes.
  4. Soak the rice sticks in warm water for 20 minutes.
  5. Drain.
  6. Drop the rice sticks into boiling water.
  7. As soon as the water returns to a boil, drain.
  8. Toss the rice sticks with 4 fl oz nuoc cham.
  9. Keep warm while cooking the chicken.
  10. Heat the oil in a sauté pan or wok over high heat.
  11. Drain the chicken, reserving the marinade.
  12. Add the chicken to the pan.
  13. Stir-fry until the chicken is about half cooked.
  14. Add the chiles, scallions, and reserved marinade.
  15. Continue to stir-fry until the chicken is nearly done.
  16. Add the snow peas and stir-fry 1 minute, until the snow peas are just cooked and still crisp.
  17. Add the tomato.
  18. Stir-fry just until the tomato is hot.
  19. Place the rice noodles in the center of dinner plates.
  20. Top with the chicken mixture.
  21. Sprinkle with sesame seeds.
  22. Serve with additional nuoc cham in small ramekins on the side.
