Cornbread And Ham Casserole Recipe


CORNBREAD AND HAM CASSEROLE Recipe
This is a good ole Southern dish that I got years ago off the back of a corn meal bag.

Ingredients
  • 2 C. cubed cooked ham
  • 1/2 C. chopped green onions
  • 1/4 C. butter or margarine, melted
  • 2 eggs, well beaten
  • 1-16 oz. can whole kernel corn
  • 1-16 oz. can cream style corn
  • 1 C. self rising corn meal
  • 5 oz. shredded mozzaralla cheese (or your choice)

Directions
  1. Preheat oven to 350°F
  2. Grease a 2 qt. baking dish or preferably a large iron skillet.
  3. In a large bowl combine all ingredients except cheese.
  4. Pour into greased baking dish.
  5. Bake 45 to 55 minutes or until golden brown and set.
  6. Sprinkle with cheese and bake an additional 2 to 3 minutes or until cheese is melted.
  7. Let stand 5 minutes before serving.
  8. 6 servings.

Sounds wonderful, too bad my heathen Yankee husband hates cornbread. He is strictly a white bread and butter man! And it can't be a crusty fancy French loaf. He has to have his "wonderbread."
