Stuffed Cabbage Casserole Recipe
I love cabbage rolls but this is much easier to make on a cold winter's eve.

Ingredients
  • 1 pound ground beef
  • 1 small onion, chopped
  • 4 cups chopped cabbage
  • 1 medium green pepper, chopped
  • 1 cup uncooked instant rice
  • 1 cup water
  • 1 can (6 ounces) tomato paste
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1/2 cup ketchup
  • 2 tablespoons vinegar
  • 1 to 2 tablespoons sugar, optional
  • 1 tablespoon Worcestershire sauce
  • 1-1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder

Directions
  1. In a skillet, cook beef and onion over medium heat until meat is longer pink; drain.
  2. Transfer to a slow cooker; add cabbage, green pepper and rice
  3. . In a bowl, combine the water and tomato paste. Stir in the remaining ingredients
  4. . Pour over beef mixture; mix well.
  5. Cover and cook on low for 4-5 hours or until rice and vegetables are tender.
  6. Yield: 4-6 servings
