Asparagus and Irish Cheese Gratin

- 20 asparagus spears shopping list
- 1 medium white onion quartered shopping list
- 4 whole garlic cloves peeled shopping list
- 3 ounces white wine shopping list
- 6 ounces heavy cream shopping list
- 1 teaspoon Dijon mustard shopping list
- 2 ounces breadcrumbs shopping list
- 2 ounces Irish cheese shopping list
- 1 tablespoon Irish butter softened shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Snap tough ends off asparagus then wash and save.
- Cook asparagus tips in boiling water for a few minutes then cool.
- Put ends into a pot with onion, garlic, wine and 12 ounces of the asparagus water.
- Bring to boil and keep at a lively simmer for 15 minutes or until the water is reduced by half.
- Strain off vegetables and return stock to pan.
- Pour in cream and add mustard then cook sauce at a rolling boil until reduced to thick sauce.
- Season with salt and pepper then make a crumble by combining crumbs cheese and butter.
- Arrange asparagus on individual plates then pour sauce on top and sprinkle with crumble.
- Place each plate under broiler until crumble browns and cheese begins to melt.
- Serve immediately.
