How to make it

  • Snap tough ends off asparagus then wash and save.
  • Cook asparagus tips in boiling water for a few minutes then cool.
  • Put ends into a pot with onion, garlic, wine and 12 ounces of the asparagus water.
  • Bring to boil and keep at a lively simmer for 15 minutes or until the water is reduced by half.
  • Strain off vegetables and return stock to pan.
  • Pour in cream and add mustard then cook sauce at a rolling boil until reduced to thick sauce.
  • Season with salt and pepper then make a crumble by combining crumbs cheese and butter.
  • Arrange asparagus on individual plates then pour sauce on top and sprinkle with crumble.
  • Place each plate under broiler until crumble browns and cheese begins to melt.
  • Serve immediately.
