Fluden is a multilayered cookie dough pastry of Eastern European origin. Filled with fruit and nuts, it is like a fruit filled bar cookie/cake

Ingredients
  • DOUGH
  • 4 1/2 cups flour
  • 2 1/4 teaspoons baking powder
  • 1 1/8 cups sugar
  • 1/4 teaspoon salt
  • 1 1/8 cups solid vegetable shortening
  • 4 large eggs
  • 2 1/2 tablespoons ice water
  • FILLING
  • 3 tablespoons lemon juice
  • 1 tablespoon fresh lemon zest
  • 10 large apples, peeled and grated
  • 1/4 cup graham cracker crumbs
  • 16 ounces fruit preserves ( apricots, orange, berry, pineapple, mango etc )
  • 1 cup raisins
  • 1 cup chopped nuts ( walnuts, pecans, almonds etc )
  • TOPPING
  • 1/3 cup sugar
  • 1 teaspoon ground cinnamon

Directions
  1. Dough :
  2. Mix flour, baking powder, sugar, salt and shortening at medium speed with electric mixer to form dough.
  3. Add eggs, 1 at a time, and blend well.
  4. Mix in ice water until dough forms ball.
  5. If dough is dry, add additional ice water by teaspoonfuls.
  6. Divide dough into 4 balls and cover with plastic wrap while preparing filling.
  7. Filling:
  8. Toss juice and zest with apples.
  9. .Add crumbs, preserves, raisins and nuts.
  10. Topping:
  11. Combine sugar and cinnamon.
  12. ASSEMBLY
  13. Flour for rolling
  14. Preheat oven to 350°F. Grease 9 x 13-inch baking pan.
  15. Roll out 1 ball of dough to rectangle the size of pan on lightly floured wax or parchment paper.
  16. Flip into pan and firmly press down.
  17. Top with one-third filling.
  18. Repeat twice with dough and filling, topping with last dough sheet.
  19. Sprinkle with topping.
  20. Bake 45 minutes or until golden brown.
  21. Cut into squares in pan and return to oven additional 10 minutes.
  22. Note: Align dough directly with edge of baking pan before flipping.

After doing an internet search, fluden literally means " flat cake " there are different transliterations such as fladdel,fludi etc.

I just had to come back to tell you I made this today, and it was SOOOOO GOOOOOD!!! Little bit time consuming, but so worth it! I would recommend using a heavily floured surface, since the dough was a little sticky when you rolled it, also flour the rolling pin. I took a picture of it and added it, hope that's OK. It was really perfect - not too sweet, just right! Will make a great breakfast food as well, because of the fruit in there. Thanks again for this great recipe! I was also wondering about the word "fluden", cause when I told people what it was, they asked: "what is fluden?" I'm glad you explained.
