How to make it

  • Grease 2 bread pans - 9 1/2 x 5 1/2 inches
  • In a microwave safe bowl, place water, milk & butter
  • Heat enough to melt butter
  • Pour into large bowl of electric mixer
  • Add salt & sugar & mashed potato
  • Beat with regular beaters to mix well & disolve the sugar
  • Add approx 3 1/3 cups of flour & beat well until well combined batter is formed
  • When cooled to lukewarm, sprinkle the yeast over the batter & beat well until yeast is thoroughly combined, scraping down the sides of the bowl
  • Change beaters to bread hook
  • Add 3 more cups of flour & beat on medium speed until a soft dough is formed
  • Turn out onto a lightly floured surface & knead dough for about 4 -5 mins, incorporating a little more flour if needed until you have a dough that is soft & smooth & no longer sticky
  • Grease a large bowl
  • Place dough, smooth side down in bowl to grease the surface
  • Turn greased, smooth side up & cover with damp tea towel
  • Place in warm area to rise until doubled in size, about 40 - 45 mins
  • Punch down & divide in 2 pieces
  • On lightly floured surface, press dough out to remove air bubbles & form into loaf
  • Place in prepared bread pan, repeat with 2nd piece of dough
  • If a softer crust is prefered, brush with melted butter
  • Place in a warm area & cover with damp tea towel
  • Let rise until doubled in size, approx. 40 mins
  • Bake in a pre-heated 375 degree oven for 35 - 40 mins
  • Loaves should be golden on top & sound hollow when tapped on the bottom
  • Turn out onto wire racks
  • Brush crust again with melted butter & leave to cool

    this looks really good, Brianna. unfortunately, i cannot make it - my body does not tolerate gluten - the stuff that is in wheat, oats, etc. but i do substitute a mixture of buckwheat, amaranth, quinoa, rice, corn. not the same - but i have made potato bread using this mixture and it turned out... edible :-) - better then the normal 'good-for-me-ersatz-bread'
