Great Homemade Potato Bread

- 1 1/2 cups water shopping list
- 1/2 cup milk shopping list
- 4 Tblspn butter shopping list
- 3 tsp salt shopping list
- 4 Tblspn sugar shopping list
- 1 1/3 cups plain mashed potato - no salt, milk or butter added shopping list
- 6 1/3 cups bread flour - may need a little more, depends on your flour shopping list
- 3 tsp fast rising yeast shopping list
How to make it
- Grease 2 bread pans - 9 1/2 x 5 1/2 inches
- In a microwave safe bowl, place water, milk & butter
- Heat enough to melt butter
- Pour into large bowl of electric mixer
- Add salt & sugar & mashed potato
- Beat with regular beaters to mix well & disolve the sugar
- Add approx 3 1/3 cups of flour & beat well until well combined batter is formed
- When cooled to lukewarm, sprinkle the yeast over the batter & beat well until yeast is thoroughly combined, scraping down the sides of the bowl
- Change beaters to bread hook
- Add 3 more cups of flour & beat on medium speed until a soft dough is formed
- Turn out onto a lightly floured surface & knead dough for about 4 -5 mins, incorporating a little more flour if needed until you have a dough that is soft & smooth & no longer sticky
- Grease a large bowl
- Place dough, smooth side down in bowl to grease the surface
- Turn greased, smooth side up & cover with damp tea towel
- Place in warm area to rise until doubled in size, about 40 - 45 mins
- Punch down & divide in 2 pieces
- On lightly floured surface, press dough out to remove air bubbles & form into loaf
- Place in prepared bread pan, repeat with 2nd piece of dough
- If a softer crust is prefered, brush with melted butter
- Place in a warm area & cover with damp tea towel
- Let rise until doubled in size, approx. 40 mins
- Bake in a pre-heated 375 degree oven for 35 - 40 mins
- Loaves should be golden on top & sound hollow when tapped on the bottom
- Turn out onto wire racks
- Brush crust again with melted butter & leave to cool
