Spiffy Spiced Roasted Carrots

- 2 pounds very fresh baby carrots shopping list
- 1 1/2 teaspoons sweet paprika shopping list
- 1 teaspoon ground cumin shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon ground ginger shopping list
- 1/4 teaspoon ground cinnamon shopping list
- 1/4 teaspoon garlic powder shopping list
- 1/8 teaspoon cayenne pepper shopping list
- 1/4 teaspoon black pepper shopping list
- 1 tablespoon olive oil, plus more for drizzling shopping list
- 2 tablespoons lemon juice shopping list
- 1 tablespoon honey shopping list
How to make it
- Preheat oven to 400°F.
- Put carrots, paprika, cumin, salt, ginger, cinnamon, garlic powder, cayenne, black pepper and 1 tablespoon of the oil into a large bowl and toss to coat.
- Transfer carrots to a large rimmed baking sheet and spread out in a single layer.
- Roast, tossing halfway through, until just tender, 30 to 40 minutes.
- Remove carrots from oven and transfer to a large bowl.
- Add lemon juice and honey and toss well.
- Drizzle with a bit more oil, if you like, then serve.
