Cashew Crusted Tilapia Recipe
I adapted a walnut and trout recipe so I could have one of my favorite restaurant dishes at home. = ) This is very simple and easy to make.

Ingredients
  • 1/2 C flour or bisquick
  • 1 Tbls salt
  • 1 1/2 tsp pepper
  • 2 large eggs
  • 2 cups finely chopped cashews
  • 2 9 - 10 oz tilapia fillets
  • 2 Tbs butter
  • 2 Tbls Olive Oil
  • 1 Lemon quartered
  • chopped fresh parsly

Directions
  1. Using a fork, stir flour, salt and pepper in large plate to blend. Whisk eggs in a medium bowl to blend. Place Cashews on a large plate. Sprinkle fillets with salt and pepper, dredge in flour mixture, then dip in eggs to coat. Press both sides of the fillet into the nuts.
  2. Melt butter and oil in heavy skillet over medium heat. Add fillets to skilliet and cook untill coating is lightly browned and fish is cooked through - about 5 min per side.
  3. Place on fillet on a plate, squeeze a little lemon on it and sprinkle some parsley and serve.

Tilapia is lower in omega 3s and higher in omega 6s so it could be considered less 'desirable' than other fish BUT it's still fish and a lean source of protien.

...hamburgers, donuts and bacon are bad???? ; )
