I got this recipe out of an old cookbook called angel food from orange county...........the pictures i found on the web apparently theres a restaurant called the flaming cheese hahaha........i had this is florida had tarpon springs........its very go... More

Ingredients
  • 1- pound soft kasseri or kefalotiri cheese
  • 3- tablepoon melted butter
  • juice of 1/2 - lemon
  • thin slices of crusty bread ......or toasted bread
  • 2- tablespoons brandy

Directions
  1. Cut cheese into 3 wedges or slices 1/4 inch thick
  2. place on a broiler pan
  3. brush with melted butter
  4. broil 4-6 inches from heat until cheese is bubbly and light brown
  5. remove from heat
  6. pour brandy over the cheese and ignite immediatley
  7. sprinkle with lemon juice and serve with bread
  8. serves 8......

I remember when my brother turned me on to a Greek restaurant in Atlanta. The waiters would come out and say "OPA" and have a tray of flaming cheese. We would also have a bottle of a blush wine called "Sta Rosa"....what memories! Thanks tink!!

Oh my, this brings back wonderful memories! I've had this in Tarpon Springs, too, but more often at Dimitri's in Ellicott City, MD. Love it, Tink! A big opa to you!
