How to make it

  • 1) Grease bottom and sides of 3 (9-inch) round cake pans; line bottoms with wax paper, and grease and flour wax paper
  • 2) Beat first 3 ingredients at medium speed with an electric mixer until blended.
  • 3) Combine flour and next 5 ingredients; add to oil mixture, beating at low speed until blended. Stir in carrot, pineapple, and pecans. Pour batter into prepared cake pans.
  • 4) Bake at 350° for 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans. Cool completely on wire racks.
  • 5) Spread Cream Cheese frosting between layers and on top and sides of cake.
  • Frosting:
  • 1) Beat butter and cream cheese at medium speed with an electric mixer until blended. Gradually add powdered sugar and vanilla, beating well.
  • *After frosting Carrot cake sprinkle with the chopped Pecans
  • Yields 4 cups

    I dont eat a lot of sweets but I do like a good Carrot Cake and this one has no raisins, YES!!!! but has pineapple, YES!!!!!!!!!!! SCORE!!!!!!!
