Swiss Corn Bake

- 3 cups fresh-cut corn shopping list
- 1 cup boiling salted water shopping list
- or cook two 9-ounce packages frozen corn according to package directions shopping list
- 1 6-ounce can evaporated milk shopping list
- 1 beaten egg shopping list
- 2 tablespoons finely chopped onion shopping list
- 1/2 teaspoon salt shopping list
- dash pepper shopping list
- 3/4 cup shredded process swiss cheese. shopping list
- 1/2 cup soft bread crumbs shopping list
- 1 tablespoon melted butter shopping list
- 1/4 cup shredded swiss cheese shopping list
How to make it
- Cook 3 cups fresh-cut corn in 1 cup boiling salted water for 2 to 3 minutes, or till just tender; or cook two 9-ounce packages frozen corn according to package directions; drain well.
- Combine corn, one 6-ounce can evaporated milk, 1 beaten egg, 2 tablespoons finely chopped onion, 1/2 teaspoon salt, dash pepper, and 3/4 cup shredded process Swiss cheese.
- Turn into 10x6x1 1/2-inch baking dish.
- Toss 1/2 cup soft bread crumbs with 1 tablespoon melted butter and 1/4 cup shredded Swiss cheese.
- Sprinkle over top.
- Bake at 350 degrees for 25 minutes.
- Serves 6.
