Ingredients
  • Cake ...............
  • 3- cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 2- teaspoons pumpkin pie spice
  • 1- teaspoon baking soda
  • 3/4- teaspoon ground nutmeg
  • 1/2- teaspoon salt
  • 1 1/2 - cups granulated suagr
  • 3/4- cup ( 1 1/2 sticks ) butter softened
  • 3- large eggs
  • 1 1/2 - cups libbys pure 100% pumpkin
  • 1/2- cup evaporated milk
  • 1/4 - cup water
  • 1 1/2- teaspoon vanilla

  • MAPLE FROSTING ................
  • 11 ounces cream cheese
  • 1/3- cup butter , softened
  • 3 1/2- cups - sifted powdered sugar
  • 2- 3 teaspoons maple flavoring
  • orange peel twists , fresh mint , chopped nuts for garnish............

Directions
  1. Preheat oven to 325 degrees f. grease and flour 2 9 inch - round cake pans
  2. for cake ................
  3. combine flour, baking powder, pumpkin pie spice, baking soda, nutmeg, and salt in a small bowl
  4. beat granulated sugar and butter in largemixer bowl until creamy
  5. add eggs; beat for 2 minutes
  6. beat in pumpkin , evaporated milk, water and vanilla.
  7. gradually beat in flour mixture
  8. spread evenly into prepared pans
  9. bake for 35 - 40 minutes or until a wooden pick comes out clean when inserted in center.........
  10. cool in pans on a wire rack for 15 minutes , then remove to wire racks to cool completely........

  12. for maple frosting
  13. beat cream cheese and powdered sugar in a larger mixer bowl until fluffy add maple flavoring , mix well..........
  14. ********************************************
  15. to assemble cake ;....................
  16. cut each layer in half horizontally , with a long , serrated knife
  17. frost between each layer and on top od cake leaving sides unfrosted
  18. garnish as desired
  19. when making 2 layer cake frost sides and top and inbetween
  20. 12 servings

Hi Mini! I have heard about this cake many times before,but have never tried it,though the recipe sounds incredible! I saved it in my favorites.
I'm SSSOOO excited-my hubby just gave me my early xmas gift this past weekend(a Kitchen Aid stand mixer)and I am in heaven trying out new recipes with my new toy.(It only took 15 years of begging for it-hee hee)

If I baked cakes Tink, I'd bake this one for sure. Would definitely eat it, if someone were to serve it. Looks great!
