Vermont Spice Cake

- cake ............... shopping list
- 3- cups all-purpose flour shopping list
- 3 1/2 teaspoons baking powder shopping list
- 2- teaspoons pumpkin pie spice shopping list
- 1- teaspoon baking soda shopping list
- 3/4- teaspoon ground nutmeg shopping list
- 1/2- teaspoon salt shopping list
- 1 1/2 - cups granulated suagr shopping list
- 3/4- cup ( 1 1/2 sticks ) butter softened shopping list
- 3- large eggs shopping list
- 1 1/2 - cups libbys pure 100% pumpkin shopping list
- 1/2- cup evaporated milk shopping list
- 1/4 - cup water shopping list
- 1 1/2- teaspoon vanilla shopping list

- MAPLE frosting ................ shopping list
- 11 ounces cream cheese shopping list
- 1/3- cup butter , softened shopping list
- 3 1/2- cups - sifted powdered sugar shopping list
- 2- 3 teaspoons maple flavoring shopping list
- orange peel twists , fresh mint , chopped nuts for garnish............ shopping list
How to make it
- Preheat oven to 325 degrees f. grease and flour 2 9 inch - round cake pans
- for cake ................
- combine flour, baking powder, pumpkin pie spice, baking soda, nutmeg, and salt in a small bowl
- beat granulated sugar and butter in largemixer bowl until creamy
- add eggs; beat for 2 minutes
- beat in pumpkin , evaporated milk, water and vanilla.
- gradually beat in flour mixture
- spread evenly into prepared pans
- bake for 35 - 40 minutes or until a wooden pick comes out clean when inserted in center.........
- cool in pans on a wire rack for 15 minutes , then remove to wire racks to cool completely........

- for maple frosting
- beat cream cheese and powdered sugar in a larger mixer bowl until fluffy add maple flavoring , mix well..........

- to assemble cake ;....................
- cut each layer in half horizontally , with a long , serrated knife
- frost between each layer and on top od cake leaving sides unfrosted
- garnish as desired
- when making 2 layer cake frost sides and top and inbetween
- 12 servings

Hi Mini! I have heard about this cake many times before,but have never tried it,though the recipe sounds incredible! I saved it in my favorites.
