Spanish Rice   Beans Recipe

Ingredients
  • 2 lb Goya red kidney beans
  • 1 6-oz can tomato paste
  • 1 8-oz can tomato sauce
  • 1 large or 2 medium onions, chopped
  • 6 avg cloves garlic, minced
  • 1/8 red bell pepper (piece ~ 2”x2”), minced
  • 1 tbsp Salt
  • Dash Pepper
  • 1/2 cup oil

Directions
  1. Sort beans to remove rocks and rotten beans- Rinse 3 times
  2. Soak in warm water in a pot at least 1 hour or overnight. Drain.
  3. Sort again, removing small wrinkled and large tightly wrinkled ones.
  4. Return to pot.
  5. Add water to make about 6 quarts total.
  6. Add 1 Tbsp of the tomato paste
  7. Add 1 Tbsp of oil
  8. Bring to a boil, stirring gently occasionally to prevent burning on the bottom.
  9. Boil 1½ hours (until they begin to soften).
  10. Remove from heat.
  11. Saute onion and pepper together in about ½ cup oil over med-high heat.
  12. When onions are clear, add garlic. Saute on high until onions are carmelized and begin to brown.
  13. Add remaining tomato paste and continue to sauté over medium heat about 2 min.
  14. Add tomato sauce and continue stirring over medium heat.
  15. Add about 12 oz water.
  16. Bring to a boil.
  17. Add spices to beans.
  18. Add 1 Tablespoon salt.
  19. Bring to a boil.
  20. Add 2 dashes pepper
  21. Taste for salt. Add as needed. Reduce heat to a simmer. Cover and simmer about 1 hour, stirring gently occasionally.

This recipe sounds delish! I've been looking for a good rice n beans recipe since my friend luis let me try his.


I never knew how to make Red Beans and Rice, But I wanted some so bad, So I used the recipe on the back of Goya's Kidney Beans and substituted Smoked Pork Neck bones for the Hamhocks and Stewed Tomatoes in the Food processor, I had everything else; And it was so good, the best beans I ever cooked. My Boys loved them and they don't care for beans that much. 4/26/09
