How to make it

  • Preheat oven to 400 degrees
  • Mix together flour and oregano, and season with sale and pepper.
  • Rinse and dry cicken pieces and dredge them lightly in the seasoned flour.
  • In a heavy, ovenproof pot, heat the olive oil over medium heat and brown the chicken on all sides. Remove the chicken to a plate.
  • Pour off all but a tablespoon or so of the oil and add the onions.
  • Add the onoin and garlic and cook gently until soft.
  • Add the wine and the broth and simmer until reduced to about half.
  • Return the chicken to the pot and sponns the sauce over until covered.
  • Bake the chicken until done, about 30 minutes.
  • Take out the chicken and put it on a warmed platter.
  • Add the lemon and butter to the sauce in the pan. If the sauce needs thickening, mix a tablespoon of butter and a tablespoon of flour and mix in, stirring constantly. Add the chopped parsley and mix well.
  • Pour the sauce over the chicken and serve immediately.
