Chicken Scarpariello Recipe
A delicious richly chickeny dish with a butter-lemon-wine sauce.

Ingredients
  • 2 - 3 lbs chicken parts (we like thighs best)
  • 1/2 cup flour
  • 1 tsp dried oregano
  • salt & pepper
  • 4 Tbl olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 cup chicken broth
  • 1/2 cup white wine
  • juice from 1 lemon
  • 3 Tbl butter
  • 2 Tbl chopped fresh parsley

Directions
  1. Preheat oven to 400 degrees
  2. Mix together flour and oregano, and season with sale and pepper.
  3. Rinse and dry cicken pieces and dredge them lightly in the seasoned flour.
  4. In a heavy, ovenproof pot, heat the olive oil over medium heat and brown the chicken on all sides. Remove the chicken to a plate.
  5. Pour off all but a tablespoon or so of the oil and add the onions.
  6. Add the onoin and garlic and cook gently until soft.
  7. Add the wine and the broth and simmer until reduced to about half.
  8. Return the chicken to the pot and sponns the sauce over until covered.
  9. Bake the chicken until done, about 30 minutes.
  10. Take out the chicken and put it on a warmed platter.
  11. Add the lemon and butter to the sauce in the pan. If the sauce needs thickening, mix a tablespoon of butter and a tablespoon of flour and mix in, stirring constantly. Add the chopped parsley and mix well.
  12. Pour the sauce over the chicken and serve immediately.

We put hot cherry peppers in our recipe....kicks it up a bit. Great recipe though...one of my favorites. ^5
