Chicken Scarpariello

- 2 - 3 lbs chicken parts (we like thighs best) shopping list
- 1/2 cup flour shopping list
- 1 tsp dried oregano shopping list
- salt & pepper shopping list
- 4 Tbl olive oil shopping list
- 3 cloves garlic, minced shopping list
- 1 medium onion, chopped shopping list
- 1 cup chicken broth shopping list
- 1/2 cup white wine shopping list
- juice from 1 lemon shopping list
- 3 Tbl butter shopping list
- 2 Tbl chopped fresh parsley shopping list
How to make it
- Preheat oven to 400 degrees
- Mix together flour and oregano, and season with sale and pepper.
- Rinse and dry cicken pieces and dredge them lightly in the seasoned flour.
- In a heavy, ovenproof pot, heat the olive oil over medium heat and brown the chicken on all sides. Remove the chicken to a plate.
- Pour off all but a tablespoon or so of the oil and add the onions.
- Add the onoin and garlic and cook gently until soft.
- Add the wine and the broth and simmer until reduced to about half.
- Return the chicken to the pot and sponns the sauce over until covered.
- Bake the chicken until done, about 30 minutes.
- Take out the chicken and put it on a warmed platter.
- Add the lemon and butter to the sauce in the pan. If the sauce needs thickening, mix a tablespoon of butter and a tablespoon of flour and mix in, stirring constantly. Add the chopped parsley and mix well.
- Pour the sauce over the chicken and serve immediately.

We put hot cherry peppers in our recipe....kicks it up a bit. Great recipe though...one of my favorites. ^5
