Ingredients
  • 4 slices bacon
  • 2 C. shredded hash brown potatoes
  • 1/4 C. chopped onion
  • 5 eggs
  • 1/4 C. milk
  • 1/2 tsp. salt
  • 1 C. shredded cheddar cheese (4 oz.)

Directions
  1. In a large skillet cook bacon until crisp.
  2. Drain bacon on paper towels, reserving 2 tablespoons drippings in skillet.
  3. Crumble bacon; set aside.
  4. Combine potatoes and chopped onion; pat into the skillet.
  5. Cook, uncovered, over low heat about 7 minutes or until crisp and brown, turning once.
  6. Meanwhile, in a small mixing bowl beat together eggs, milk and salt; pour over potato mixture.
  7. Top with cheese and bacon.
  8. Cover; cook over low heat for 5 to 7 minutes or until egg mixture is set.
  9. Loosen omelet; fold in half.
  10. Turn out of skillet onto plate.
  11. Cut into wedges to serve.
  12. If desired, garnish with green onions.

Alterations


Realizing that it took away the easy one-pan prep recommended here, I made two omelets in small pans, using half the hashbrowns and adding 4 white mushrooms that I sauteed with the onion.
