This is a keeper!!!! Great quick and easy weeknight dish or impress the guests with this lip smackin' cranberry topped chicken dish!

Otterpond: Cranberry Sauced Chicken Recipe - for Diabetics
Serving Size:
1 Breast Half
Ingredients:
6 boneless chicken breast halves
1/2 cup chopped onion
1 tablespoon olive oil
1/2 teaspoon grated orange peel
1 1/2 cups fresh cranberries
Ingredients for 1 cup Low-Cal Catsup:
1 cup Tomatoe Sauce
1/2 cup Splenda, granulated
2 tbsp, vinegar
mix it all up
Ingredients for 1/2 cup Low-cal Light Brown Sugar
3/4 tbsp Molasses
1/2 cup Splenda Granulated
mix it all up
Instructions:
Preheat oven to 400.
Place chicken breast halves in a 9 x 13 x 2 inch glass baking dish.
Bake for 25 minutes.
While chicken is baking, cook onion in hot oil, stirring until tender.
Add ketchup, brown sugar and orange peel; stir until the brown sugar is dissolved. Stir in the cranberries.
Spoon the sauce over the chicken once they have finished baking the first 25 minutes.
Bake an additional 25 minutes or until chicken is tender and cooked through.

Sounds yummy! Do you need to cover it at the end of baking? I was wondering if the sugar in the sauce turned really dark brown or if it kept a reddish color.

No need to cover this. The cranberries retain a beautiful red color - makes a nice presentation.
