How to make it

  • Measure sourdough starter cold
  • Bring to room temperature
  • Add the ingredients according to your bread machine directions
  • Select dough cycle
  • When cycle is complete, remove dough,
  • Punch down
  • Cover and let rest 10 minutes
  • On a lightly floured surface, shape dough into a ball.
  • Place on a lightly greased sheet sprinkled with cornmeal
  • Flatten slightly to form an 8" round loaf
  • Using a very sharp knife make several 1/4" inch deep cuts across top
  • Cover and let rise in warm place for 30-45 minutes or until nearly doubled
  • Lightly brush top with water
  • Bake in 400 oven for 20-30 minutes or until bread sounds hollow when tapped lightly
  • Remove from baking sheet
  • Cool on wire rack
  • Makes 1 (1-1/2 pound loaf)

    This sounds awesome, I'm going to try to overcome my trepidation in the bread-making dept. and give it a go. I LOVE sourdough bread and haven't been to San Fran in years ... sigh.

    Sounds good, saved and will try. I watched a cooking show on PBS, they used a box cutter for cutting the top. A bakery in Berkley,CA. I have a friend who is going to give me sourdough starter he bought in Alaska from a bakery. He has to bake two loafs, eats the first one from oven and then saves the second for later. Yummy hot sour dough, I like it.
