Peppermint Meltaways Recipe
This is another cookie that usually makes it to my cookie platters at Christmas. Enjoy.

Ingredients
  • 1/2 cup powdered sugar
  • 1 cup butter softened
  • 1/2 teaspoon peppermint extract
  • 1-1/4 cups all purpose flour
  • 1/2 cup cornstarch
  • Glaze:
  • 1-1/2 cups powdered sugar
  • 2 tablespoons butter softened
  • 2 tablespoons milk
  • 1/4 teaspoon peppermint extract
  • 3 drops red food color
  • Several candy canes crushed

Directions
  1. Combine sugar, butter and peppermint extract in large bowl.
  2. Beat at medium speed until creamy.
  3. Reduce speed to low then add flour and cornstarch.
  4. Beat until well mixed then cover and refrigerate one hour.
  5. Heat oven to 350 then shape dough into 1” balls and place 2” apart on ungreased cookie sheets.
  6. Bake 15 minutes or until edges are lightly browned then allow to stand 1 minute.
  7. Remove from cookie sheets and cool completely.
  8. Combine powdered sugar, butter, extract and enough milk for desired glazing consistency.
  9. Stir in food color then drizzle over cooled cookies and immediately sprinkle with crushed candy.
