Belgian Christmas Cookies Recipe
These are very pretty and look great on the Christmas platters but more importantly they taste great. A light and airy cookie with a great butter and almond taste. Enjoy

Ingredients
  • 2/3 cup butter
  • 1 teaspoon almond extract
  • 1 cup packed brown sugar
  • 2 eggs
  • 1-2/3 cups all purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup finely chopped blanched almonds
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoons red decorator sugar
  • 2 teaspoons green decorator sugar

Directions
  1. Preheat oven to 375.
  2. Cream butter with extract then add brown sugar gradually creaming until fluffy.
  3. Add eggs one at a time beating thoroughly after each addition.
  4. Sift flour, baking powder and salt together.
  5. Add in thirds to creamed mixture mixing until blended after each addition.
  6. Turn into a greased jelly roll pan and spread evenly to edges.
  7. Sprinkle almonds and cinnamon over batter then sprinkle with mixture of red and green sugars.
  8. Bake 10 minutes then cut into bars while still warm.
