Cream Cheese Filling For Muffins Recipe

This is my version of a recipe that we used when I worked in a bakery. It makes a great addition to any of the muffins from my Basic Muffins recipe. It is especially good in blueberry muffins.

Ingredients
- 12 ounces cream cheese
- 1/4 cup plus 2 tablespoons sugar
- 1 Egg
Directions
- Combine cream cheese and sugar until blended, add egg and mix until smooth.
- Pipe or spoon filling into center of muffin batter before baking muffins.
- Bake muffins as usual.
