Baked Potato Salad Recipe

Ingredients

4.5lbs. red potatoes cut into bite-size chunks

1/4c. olive oil

2 envelopes italian salad dressing mix (I use Good Seasons Zesty Italian)

1 med. green pepper; chopped

1 med. red pepper; chopped

1 bunch green onions; chopped

2 large tomatoes; chopped

4 hard-cooked eggs; chopped

5 bacon strips; cooked & crumbled

1& 1/2c. mayonnaise

1T. vinegar

1T. lemon juice

2t. dried basil

1t. salt

1/2t. pepper

1/4t. garlic powder

Directions

Toss potatoes with oil & dressing mixes.

Place potatoes onto a 15x11" baking sheet & bake @ 400F for 45 min. or until tender. (Do not let potatoes brown. You still want them pale, yet fork tender.)

Cool potatoes.

Transfer potatoes to a large bowl & add peppers, onions, tomatoes, eggs & bacon. Toss gently.

Combine remaining ingredients in a small bowl.

Pour over salad & mix gently.

Cover & refrigerate for at least 1 hour.
