Ingredients

How to make it

  • Toss potatoes with oil & dressing mixes.
  • Place potatoes onto a 15x11" baking sheet & bake @ 400F for 45 min. or until tender. (Do not let potatoes brown. You still want them pale, yet fork tender.)
  • Cool potatoes.
  • Transfer potatoes to a large bowl & add peppers, onions, tomatoes, eggs & bacon. Toss gently.
  • Combine remaining ingredients in a small bowl.
  • Pour over salad & mix gently.
  • Cover & refrigerate for at least 1 hour.

    This is really good. I did have to cut back to one envelope of Italian salad dressing mix. REALLY good!

    This sounds great. It is different from my potato salad. That is a good thing because I'm sick of mine(too many requests for it this summer). I'll bet I get requests for this one too. L.

    Yummy. Everything in here is so good. I'm going to make this Sunday afternoon and serve it at our cookout. Thanks for sharing.
