Baked Potato Salad

- 4.5lbs. red potatoes cut into bite-size chunks shopping list
- 1/4c. olive oil shopping list
- 2 envelopes Italian salad dressing mix (I use Good seasons Zesty Italian) shopping list
- 1 med. green pepper; chopped shopping list
- 1 med. red pepper; chopped shopping list
- 1 bunch green onions; chopped shopping list
- 2 large tomatoes; chopped shopping list
- 4 hard-cooked eggs; chopped shopping list
- 5 bacon strips; cooked & crumbled shopping list
- 1& 1/2c. mayonnaise shopping list
- 1T. vinegar shopping list
- 1T. lemon juice shopping list
- 2t. dried basil shopping list
- 1t. salt shopping list
- 1/2t. pepper shopping list
- 1/4t. garlic powder shopping list
How to make it
- Toss potatoes with oil & dressing mixes.
- Place potatoes onto a 15x11" baking sheet & bake @ 400F for 45 min. or until tender. (Do not let potatoes brown. You still want them pale, yet fork tender.)
- Cool potatoes.
- Transfer potatoes to a large bowl & add peppers, onions, tomatoes, eggs & bacon. Toss gently.
- Combine remaining ingredients in a small bowl.
- Pour over salad & mix gently.
- Cover & refrigerate for at least 1 hour.
