Baked Potato Salad Recipe

This is a Taste of Home recipe that I have been making ever since I first tried it. It has an unusual dressing and is soooooo good!

Ingredients
- 4.5lbs. red potatoes cut into bite-size chunks
- 1/4c. olive oil
- 2 envelopes italian salad dressing mix (I use Good Seasons Zesty Italian)
- 1 med. green pepper; chopped
- 1 med. red pepper; chopped
- 1 bunch green onions; chopped
- 2 large tomatoes; chopped
- 4 hard-cooked eggs; chopped
- 5 bacon strips; cooked & crumbled
- 1& 1/2c. mayonnaise
- 1T. vinegar
- 1T. lemon juice
- 2t. dried basil
- 1t. salt
- 1/2t. pepper
- 1/4t. garlic powder
Directions
- Toss potatoes with oil & dressing mixes.
- Place potatoes onto a 15x11" baking sheet & bake @ 400F for 45 min. or until tender. (Do not let potatoes brown. You still want them pale, yet fork tender.)
- Cool potatoes.
- Transfer potatoes to a large bowl & add peppers, onions, tomatoes, eggs & bacon. Toss gently.
- Combine remaining ingredients in a small bowl.
- Pour over salad & mix gently.
- Cover & refrigerate for at least 1 hour.

This sounds great. It is different from my potato salad. That is a good thing because I'm sick of mine(too many requests for it this summer). I'll bet I get requests for this one too. L.

This is really good. I did have to cut back to one envelope of Italian salad dressing mix. REALLY good!
