These meatballs make a great meal served with rice or potatoes or serve as a wonderful appetizer for a casual event.

  • Meatballs
  • 1 lb. lean ground beef
  • 1/2 lb. lean ground pork
  • 1 lb. veal
  • 4 slices white bread (Sunbeam is best)
  • 3/4 cup whole milk
  • 1 finely chopped onion
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 minced glove of garlic
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon allspice
  • 2 Eggs slightly beaten
  • Barbecue Sauce
  • 1/3 cup minced onion
  • 3 Tablespoons butter
  • 1 Cup ketchup
  • 1/3 cup white vinegar or fresh lemon juice
  • 2 Tablespoons brown sugar
  • 1/2 cup water
  • 2 teaspoons prepared mustard
  • 2 tablespoons worchestershire sauce
  • 1/8 teaspoon salt
  • Meatballs
  • -Have meats ground together 2 or 3 times. (I use an old-fashioned meat grinder because my deli won't do it for me.)
  • - In a seperate bowl, tear bread into small-medium pieces, and milk, and stir together to make a "paste".
  • -Add to meat mixture in mixing bowl.
  • -Lightly mix in the rest of the seasonings and the beaten eggs.
  • -Form into 1-inch balls.
  • -Set on wax paper-covered baking sheet and let stand for about 30 minutes. (Lets the seasoning marry with the meat.)
  • **While meatballs are marrying, you can start the barbecue sauce**
  • -Brown meatballs in 1/2 inch of hot fat(grammy's way) or oil. Pour off fat and put meatballs back into covered skillet.
  • -Add barbecue sauce and cook about 30 minutes.
  • Barbecue Sauce
  • -Saute onions in butter until lightly brown.
  • -Add remaining ingredients. Cover and simmer for 10 minutes.
  • TO FREEZE: Cool and package in freezer containers. To serve, remove from freezer and either but them in a covered chafing dish or skillet over medium heat until hot (about 25 minutes). I don't recommend microwaving to thaw because it changes the texture of the meatball signifigantly.

Alterations


I made two minor alterations. Due to the fact that I recently bought half a cow and now have about 80 lbs of hamburger to use, I replaced the veal with ground beef. Not that I think it was better but it did work out fine. Also I used 1/2 cup of ketchup and 1/2 cup of Chili Sauce. After making all of the barbecue sauces and such I was running out of ketchup... :)
