Potatoe Omelette Recipe

Ingredients

3 large eggs

1.5 tsp salt

1 onion finely chopped

4 eggs

olive oil for frying the potatoes

Directions

Fry the onion and potatoes in the olive oil until tender

Stir them all the time to prevent them from sticking

Beat the eggs

Add the salt

Add this mixture to the potatoes and onions in the pan

Shake pan to stop the egg sticking

When the omellette is firm, but not dry cober the pan with a flat plate

Grasp the pan and plate firmly together and invert them so that the omellette falls onto the plate.

Carefully slide the omelette back into the pan and cook till done
