Ingredients

How to make it

  • Fry the onion and potatoes in the olive oil until tender
  • Stir them all the time to prevent them from sticking
  • Beat the eggs
  • Add the salt
  • Add this mixture to the potatoes and onions in the pan
  • Shake pan to stop the egg sticking
  • When the omellette is firm, but not dry cober the pan with a flat plate
  • Grasp the pan and plate firmly together and invert them so that the omellette falls onto the plate.
  • Carefully slide the omelette back into the pan and cook till done

    For a little zest, add a finely chopped green chillie; seeds removed; to either the potato or the egg mixture

    I love Spanish Omelette. I recently made one using a Weight Watchers recipe (for my husband.) It was delicious. Your recipe is very similar to what I've been doing for years and is fantasticly satifying. You've got my five!

    hmmm yum haven't had a Spanish omelet for years, think I will make hubby one for his tea tomorrow thanks for the reminder
