Potatoe Omelette

- 3 large eggs shopping list
- 1.5 tsp salt shopping list
- 1 onion finely chopped shopping list
- 4 eggs shopping list
- olive oil for frying the potatoes shopping list
How to make it
- Fry the onion and potatoes in the olive oil until tender
- Stir them all the time to prevent them from sticking
- Beat the eggs
- Add the salt
- Add this mixture to the potatoes and onions in the pan
- Shake pan to stop the egg sticking
- When the omellette is firm, but not dry cober the pan with a flat plate
- Grasp the pan and plate firmly together and invert them so that the omellette falls onto the plate.
- Carefully slide the omelette back into the pan and cook till done

I love Spanish Omelette. I recently made one using a Weight Watchers recipe (for my husband.) It was delicious. Your recipe is very similar to what I've been doing for years and is fantasticly satifying. You've got my five!
