Ingredients
  • Large oven bag
  • 1Tsp flour
  • 1 large roasting chicken
  • 8 large fresh basil leaves
  • 1 large orange thinly sliced
  • 1 medium onion sliced and cubed
  • vegatable oil
  • 1 tsp ground black pepper

Directions
  1. Preheat oven to 180 c
  2. shake flour into the bag and place in a baking pan.
  3. Loosen the skin of the chicken over the breast by slipping your fingers or a knife under the skin.
  4. Place the basil leaves and 4 orange slices under the skin.
  5. Divide the onion cubes and remaining orange slices between cavity of chicken and the bottom of the bag.
  6. Brush the chicken with the vegetable oil.
  7. Sprinkle with the pepper
  8. Place chicken in oven bag on top of onion and orange slices.
  9. Close the oven bag with a nylon tie.
  10. Cut 6 slits in the top.
  11. Bake for 1.5 hours or until the chicken is tender.
