This basil cream sauce has many uses. The chicken here benefits from it greatly although the meat can also stand alone.

  • CHICKEN:
  • 4 large chicken breast filets
  • 1 cup breadcrumbs
  • 1/2 cup Parmesan cheese
  • 1 tablespoon fresh parsley, minced
  • 1/4 pound bacon, chipped
  • 3 ounces butter
  • 2 garlic cloves, minced
  • 2 teaspoons worcestershire
  • 1/2 teaspoon dry mustard
  • BASIL SAUCE:
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 clove garlic, minced
  • 1 cup fresh basil leaves, chopped
  • 1/2 cup heavy cream
  • 1 large egg yolk

Directions
  1. CHICKEN:
  2. Combine the breadcrumbs, Parmesan cheese, and parsley in a bowl.
  3. Set aside.
  4. Preheat the oven to 375 degrees F.
  5. Fry the bacon, drain and add to the crumbs.
  6. Melt the butter.
  7. Add the minced garlic, worcestershire and dry mustard.
  8. Heat garlic through.
  9. Coat breasts with butter mixture.
  10. Place in suitably sized baking dish (dependent on size of breasts).
  11. Press crumb mixture into the breasts.
  12. Bake for 25 minutes.
  13. **Start the sauce
  14. Combine olive oil, vinegar, garlic, basil and cream in a saucepan.
  15. Whisk together until heated through.
  16. Beat the egg yolk lightly.
  17. Add a small amount of the yolk to the sauce, whisking constantly, so yolk does not cook.
  18. Whisk in remainder of yolk.
  19. Stir sauce until desired thickness.
  20. DO NOT BOIL.
  21. Pour over breasts before serving OR serve separately in a bowl with a ladle.
