Ingredients
  • 1 Pound Ground Veal (or) Beef
  • 1 Pound Ground Pork
  • 1 Onion(1Cup),finely chopped
  • 6 Tablespoons Flour
  • 3 Cups Club Soda(this makes for the extra lightness of the meatballs)
  • 2 Farm Fresh Eggs,well beaten
  • 2 teaspoon salt
  • 1/2 Fresh Ground Pepper
  • 2/3 Cup Butter

Directions
  1. Combine the ground veal,pork,and onion in bowl.
  2. Stir in the flour and beat thoroughly.
  3. Beat in the club soda,2 Tablespoons at a time,beating constantly to aerarte the mixture.
  4. Beat in the eggs,salt and pepper.
  5. Beat the mixture until fluffly.
  6. Chill mixture and shape by 2 teaspoons each .
  7. Dust lightly with flour.
  8. Fry the meatballs in a large frying pan in the butter,until brown on all sides.
  9. Serve with Picked Beets if you wish.

I love the fact that you used butter to fry them - it does give such a nice taste to the meatballs - sometimes you cannot substitute it whatever you do.


Everything's better with butter, 22566! I want to thank you for this great post. I'd probably use the "meatloaf" mix that's available around here.. it's beef, pork and veal in one pacakge. You get my five and another THANKS!

The 'Club Soda' is a Must for the
'Lightness' of the Meatballs ~ I also like
using 'REAL Butter' to fry them ~

Oh man oh man... you bring back some memories. When I was in grade school, 2 - 4th grades my best friend was Claus ("Klos") from Sweden. He had two brothers Ulfe ("Ufeh") and Jan ("Yan")(whom my older sister had a crush on but I never got her to admit it!). Anyways, I used visit Claus' house often and his mom always made these meatballs. They were fantastic! I had forgotten about them and thanks for bringing back the memories of taste. They were always served with applesauce~ go figure. But they and the combination was good and I loved them. Cheers to you and five forks!
