How to make it

  • Genereously butter a 9x13 inch baking dish or casserole.
  • Bake the sweet potatoes until soft. Peel and mash (this may be done ahead and kept in the refrigerator until you're ready to prepare the casserole).
  • Mix mashed potatoes together with sugar, eggs, butter, evaporated milk, cinnamon, marshmallows and coconut; place the mixture into the baking dish.
  • In a small bowl, mix together brown sugar, pecans and butter; spread the topping over the casserole.
  • Bake 30-35 minutes at 400 degrees.

    Wow! Sounds VERY sweet (my husband would not mind at all), but I like the addition of the coconut. That would be very good. The evaporated milk would make it more like a delicious sweet potato casserole. Great post Krum.
