Roast Chicken Legs W Fresh Herbs Recipe

Inspired by my trip to the south of France. Serve with a salad for a delicious rustic meal.

Ingredients
  • 3 lbs chicken parts ( i used whole legs)
  • 2 large baking potatoes -peeled, halved and cut into wedges
  • i carrot -peeled and roughly chopped
  • i med onion - sliced
  • 4 cloves of garlic roughly chopped
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 2 sprigs fresh marjoram / oregano
  • extra virgin olive oil
  • salt and pepper

Directions
  1. Preheat oven to 450 degrees.
  2. Place potatoes, onions and garlic in a metal roasting pan.
  3. Drizzle with olive oil and sprinkle with salt and freshly cracked pepper.
  4. Toss to combine and then push vegetables towards outside of pan, leaving room in the middle for the chicken.
  5. Trim most of fat from chicken,
  6. Rinse and dry thoroughly with paper towels.
  7. Rub the chicken in the bottom of the roasting pant to coat with extra olive oil, salt and pepper on both sides, Adding extra oil, and spices if necessary.
  8. Arrange chicken in the middle of the pan surrounded by veggies.
  9. Place fresh herbs on the chicken, spreading evenly.
  10. Cook in oven for 45-60 minutes.
  11. *Do not cover, do not turn. Just let it cook.

This was really good. I loved the herbs on the chicken skin. I think I may turn down my oven next time though. The onions burned. My oven tends to run hot, though, and I left the chicken in for an hour. I should have done 45 minutes. Delicious! Thank you!
