Roast Chicken Legs W Fresh Herbs

- 3 lbs chicken parts ( i used whole legs) shopping list
- 2 large baking potatoes -peeled, halved and cut into wedges shopping list
- i carrot -peeled and roughly chopped shopping list
- i med onion - sliced shopping list
- 4 cloves of garlic roughly chopped shopping list
- 2 sprigs fresh rosemary shopping list
- 4 sprigs fresh thyme shopping list
- 2 sprigs fresh marjoram / oregano shopping list
- extra virgin olive oil shopping list
- salt and pepper shopping list
How to make it
- Preheat oven to 450 degrees.
- Place potatoes, onions and garlic in a metal roasting pan.
- Drizzle with olive oil and sprinkle with salt and freshly cracked pepper.
- Toss to combine and then push vegetables towards outside of pan, leaving room in the middle for the chicken.
- Trim most of fat from chicken,
- Rinse and dry thoroughly with paper towels.
- Rub the chicken in the bottom of the roasting pant to coat with extra olive oil, salt and pepper on both sides, Adding extra oil, and spices if necessary.
- Arrange chicken in the middle of the pan surrounded by veggies.
- Place fresh herbs on the chicken, spreading evenly.
- Cook in oven for 45-60 minutes.
- *Do not cover, do not turn. Just let it cook.

This was really good. I loved the herbs on the chicken skin. I think I may turn down my oven next time though. The onions burned. My oven tends to run hot, though, and I left the chicken in for an hour. I should have done 45 minutes. Delicious!...more
