How to make it

  • Preheat oven to 450 degrees.
  • Place potatoes, onions and garlic in a metal roasting pan.
  • Drizzle with olive oil and sprinkle with salt and freshly cracked pepper.
  • Toss to combine and then push vegetables towards outside of pan, leaving room in the middle for the chicken.
  • Trim most of fat from chicken,
  • Rinse and dry thoroughly with paper towels.
  • Rub the chicken in the bottom of the roasting pant to coat with extra olive oil, salt and pepper on both sides, Adding extra oil, and spices if necessary.
  • Arrange chicken in the middle of the pan surrounded by veggies.
  • Place fresh herbs on the chicken, spreading evenly.
  • Cook in oven for 45-60 minutes.
  • *Do not cover, do not turn. Just let it cook.

    This was seriously yum. The aromas emanating from the oven were fabulous. Had to substitute given what we had (dried marjoram & thyme; small red potatoes), otherwise, used 3 chicken leg quarters, 3 sprigs rosemary ('cuz we love it), remainder according to recipe. 55 mins. @ 450, no adjustments. Chicken + all veg. turned out excellent.. Onion rings ended up a wee bit scorched and we frankly loved the flavour of that. Our 1st try of grouprecipes, and it was a triumph. Merci softgrey!

    This was really good. I loved the herbs on the chicken skin. I think I may turn down my oven next time though. The onions burned. My oven tends to run hot, though, and I left the chicken in for an hour. I should have done 45 minutes. Delicious! Thank you!
